Slow Cooker Onions and a Mini Holiday






I have been getting some HUGE onions in my veg box the last couple of weeks and needed to use them up.  OH hates onions and anything cooked with onions, so I would be struggling to eat these monsters on my own.  One of the things I like about having a veg box is that you never know what you are going to get so have to be creative with what turns up.  I love all vegetables so never have the problem of not liking what is in the box.  These onions weighed nearly 4 lbs all together, too much for me to get through.   I sliced them finely and piled them into my slow cooker with some olive oil and left them cooking for the day until they were nicely caramelised.   They are now in containers in the freezer,  at least they haven't been wasted.







We are going away tomorrow for a few days on a 'mini' holiday.  I have to admit, there have been times over the last few weeks when I have been feeling very low.    Hopefully this will give me the boost I need before I go back to work.  People laugh when I tell them where we are going as it is only a few miles from where we live, but so what.  We are renting a little cottage for a few days set in 24 acres of wild landscape, wild deer have been spotted this week so I am hoping they will still be there. There is a 'natural' swimming pool, though it may be a little cold, and I don't think I could struggle into my wetsuit at the moment without doing myself an injury.  It is an 'eco' holiday complex so right up my street.   Hopefully it will help me get a little fitter as I will be taking walks during the day and sitting by the log fire at night knitting and crocheting,  bliss.  OH will be popping into work but I will be happy to mooch around on my own.   Hopefully I will come back renewed and full of plans and projects.

I don't know what the wifi will be like so you may not hear from me for a few days.

    Thats a really good idea for storing onions may have to give it a try. :-)

  3. I love onions. Raw ones make me sick but pickled or cooked are fine.
    I love the crockpot idea but I usually do not have that many at one time.
    One year so many years ago we had no money as usual, just making it by. We took a in town vacation. We worked in the morning then in the afternoon we visited every local beach that we usually never went too.
    We spent very little and had a lovely time.

  4. Good idea with the onions and the SC. I have some onions to go through before they spoil. I usually just slice and freeze them raw, but I think I shall do them half and half your way and mine.

  5. I am going to jump on the bandwagon and try your onion idea. The idea of the mini holiday is a cracker, I was having a look at places on The Gower earlier for a long weekend.

  9. It was a good idea to cook the onions that way. I've started letting onions and other veggies cook for a long time when making a soup, the extra flavor adds a lot. Enjoy your trip. :)
